Custom Processing of Beef, Hogs, Sheep & Deer in Georgetown, Ohio

What started in Lancaster County took root again in southern Brown County in 2016. Clair and Regina, along with their family, moved to a 100-acre farm between Georgetown and Sardinia with a clear goal in mind: raise cattle and process their own meat.

The early years were spent building toward that vision—living in a rental home next to the farm, working the land, and gradually developing the operation. In 2024, the farmhouse was completed, bringing the entire setup together.

Today, the farm includes 165 acres of cropland, producing feed stored in three silos and multiple grain bins. The feedlot supports up to 200 head of cattle, creating a steady, controlled system from start to finish.

Everything begins on the farm. Cattle are carefully sourced as quality feeder stock and raised on a grain-fed diet. The herd consists of Angus cattle that are not implanted, meaning the beef is hormone-free.

The layout is intentional—the feedlot and butcher shop sit within 500 feet of each other. On processing days, cattle are moved a short distance to the facility, keeping stress low and handling minimal.

This close connection between raising and processing allows for full oversight of the product. Each animal is accounted for, and all beef is confirmed antibiotic-free before processing.

The butcher shop itself grew out of an old tobacco barn on the property. What began as a small lean-to for deer processing was gradually renovated, step by step, into a fully functioning facility.

Today, the building is a complete processing operation with cooler space for around 20 head of beef and freezer capacity to match. It operates under federal inspection, allowing meat to be sold across the United States.

The focus has always been on doing things right for long-term use. The facility is known for its cleanliness, something regularly noted by both inspectors and customers.

All processing is done on-site, including cutting, vacuum sealing, seasoning, curing, and smoking. Recipes and spice blends are developed in-house and used across beef, pork, and deer products.

The business centers on providing quality meat in practical quantities. Customers can purchase beef by the whole, half, or quarter, as well as by the pound.

Pork is supplied through a trusted local partner, ensuring consistency and quality. Products are typically packaged in case quantities—often 10-pound boxes—to simplify handling and storage. Smaller quantities are available for those looking to try individual items.

In addition to beef and pork, fresh chicken, deli meats, and cheeses are available by the case, with weekly deliveries from a food service supplier. Special orders are placed in advance and delivered fresh each week.

The setup is straightforward: customers review a product guide, place an order, and items are retrieved from cold storage. It’s a simple system that prioritizes efficiency while the operation continues to grow.

Deer season has become a major part of the operation, with over 600 deer processed in 2025 alone. Southern Ohio draws hunters from across the region, and many return year after year.

A full range of deer processing options is available, including smoked products and custom cuts. Each order is kept separate, ensuring hunters receive only their own meat.

To accommodate varying schedules, a refrigerated trailer allows for 24-hour drop-off during peak times. Clear instructions and tagging systems are provided on-site.

Turnaround typically runs around three weeks, depending on volume. While rush orders aren’t offered, the process is designed to be fair and consistent for everyone.

Care standards are taken seriously—only properly handled deer are accepted, maintaining the quality of both the facility and the final product.
